Position Purpose

Our Food Services Team Leaders provide efficient management and operations of the dietary and catering function, ensuring a safe, high quality food service to the residents and guests in compliance with legislative requirements.  

Position Accountabilities:

Manage all compliance aspects of food preparation, reheating, cooking, presentation and serving of palatable and nutritious meals and mid-meals using the meals supplied from Bolton Clarke central production kitchens. This is achieved by:

  • Ensuring all foods are handled according to the food safety plan and compliant with the Aged Care Nutrition and Hydration requirements
  • Ensuring consistent communication with central production kitchens on quantity, quality and functions.
  • Ensuring that the food reheated or cooked is of suitable consistency for the consumption of individual residents
  • Ensuring that food is prepared in appropriate quantities to meet the resident’s menu choice
  • Preparing cultural/ religious meals to meet the needs of the individual residents within the budgetary constraints
  • Preparing special diets in accordance to the resident’s care plan, dietician or Nursing staff guidelines (e.g. diabetic, high/low protein, gluten free or celiac)
  • Preparing and accounting for food items that don’t require cooking, kitchen snack and meals, which are made available after kitchen hours
  • Being aware of resident’s food preferences and substitute alternatives where possible
  • Preparing and presenting food within set time frame to ensure freshness, quality and to maintain food safety
  • Monitoring and registering food wastage
  • Making sure the meal times are adhered to, and catering staff and carers deliver the meals in a high quality and efficient manner
  • Ensure all food to be prepared, cooked, served and stored in accordance with the relevant State Food Regulations and Food Safety Program
  • Maintaining regular cleaning of all areas within the kitchen and kitchenettes as per schedule and Food Safety Plan
  • Ensuring staff maintain a high standard of personal hygiene
  • Responsible for ordering, delivery, stock control and food storage processes for Hotel Services
  • Assist Senior Management with the budgeting for food and labour costs ensuring budget is achieved for hotel services
  • Provide leadership and supervision of the day-to-day activities of the catering team.
What do we need from you?
  • Certificate IV in Food Services or Commercial Cookery or possess the knowledge, skills and experience deemed to be the equivalent by Bolton Clarke
  • Demonstrated experience in commercial catering or other food services for the Aged in either a nursing home or hospital practice setting
  • Certificate – Food Safety Supervisor
  • Demonstrated knowledge of State Food Safe Regulations
  • Experience in organisation and management ability
  • Substantial communications skills, both verbal and written
  • Ability to work independently and as a member of a team
  • Police Check (valid within the last 3 years) or willingness to obtain one
  • Working rights in Australia 
  • Similar experience in Age Care, catering and rostering will be highly regarded
